Blooming quesadilla ring

Easy and yummy quesadilla ring that I made for my friend Maya's baby shower.
Ingredients
2 cups cooked and shredded chicken breast.
1 chopped onion.
1 chopped sweet red pepper.
1 chopped jalapeno pepper.
1 cup taco sauce.
3 cups shredded cheddar cheese.
3 cups shredded Monterey jack cheese.
20 taco size tortillas.
To serve:
Salsa sauce
Chopped parsley/cilantro.
Directions
Preheat the oven to 190c (375f).
Cut the tortillas in half.
Mix the chicken with the taco sauce, peppers and chopped onion.
In a separate bowl mix the 2 cheeses.
Line a baking sheet with parchment paper and place a jar in the center.
Place 2 tablespoons of the chicken mixture in the center of each tortilla, top with the cheese mixture and fold into a cone shape. Place the cone, open side down, point side facing the jar.
Repeat with the rest of the tortillas till you have a full circle.
Spread some of the cheese mixture on top of the cones and start adding another ring of cones on top of the first one. Top with cheese and add the 3rd and last ring. Top it all with the rest of the cheese mixture.
Remove the jar from the center of the ring and bake for 15-20 min until the cheese melted and the edges of the tortillas are crisp.
Carefully transfer the ring to your serving plate, garnish with chopped parsley/cilantro, place salsa sauce in the center of the ring and serve immediately.
