These muffins are my youngest's favorite. Super easy to make, and so, so yummy.
1 ¼ cups flour.
2 teaspoon baking powder.
¾ cups sugar.
2 beaten eggs.
½ cup sour cream or ½ cup buttermilk or ½ cup milk mixed with 1.5 teaspoons vinegar.
Zest of one orange.
1 teaspoon vanilla extract.
6 tablespoons butter in room temperature or 6 tablespoons vegetable oil.
¾ cup fresh washed blueberries.
½ cup coarse sugar for the topping.
Preheat the oven to 450.°f/230°c.
Line muffin pan with muffin paper cups.
In a bowl combine all the dry ingredients (not including the coarse sugar for topping).
Add the washed blueberries (make sure they dried) to the bowl, and gently coat them in flour.
Add the wet ingredients and mix well, gently, only till combined.
Fill the batter all the way to the top.
Sprinkle the top with coarse sugar.
Bake for 10 min on high temperature, then lower the temperature to 350°f/180°c (without opening the oven) and keep baking for another 10-12 min till golden.
Remove from the oven and let cool for few min.
