Bright summer spinach and strawberries salad
This salad is so good that you just can't have enough of it. It can be a side to any meal, or a light meal by itself. I made it multiple times and it's always a success. To make a meal out of it you can add grilled fish or chicken strips to the salad. Yummy.
Ingredients
For the salad:
4 cups strawberries - sliced to quarters.
8 cups fresh washed spinach leaves.
1/2 cup pecans.
1/2 cup blue cheese/Gorgonzola (my favorite)/feta - crumbled.
½ chopped red onion.
For the dressing:
¼ cup vegetable oil.
¼ cup apple cider vinegar.
¼ cup honey/maple syrup.
2 tablespoons poppy seeds.
2 teaspoons dijon mustard.
Salt and pepper to taste.
Instructions
Place all the salad ingredients in a large bowl.
Whisk all the dressing ingredients in a bowl or shake well in sealed container.
Taste the dressing and adjust flavors as needed.
Drizzle the dressing all over the salad and toss.
