Danish pancake balls


Recipe inspired by "The great Scandinavian baking book".


To make those lovely pancakes you will need the special pan - Aebleskiver pan. I purchased mine on Amazon and I absolutely love it. This pancakes are so beautiful and yummy, and you have a surprise filling when you bite into them. Kids love it. To tell you a little secret, you can probably use any pancake batter with this pan (yes, even a boxed one), but here I'm sharing with you the original Danish recipe.

Makes 20 pancakes


Ingredients

1 cup milk.

½ cup melted butter (1 stick/ 113gr).

3 eggs - separated.

2 tablespoons sugar.

1 ½ cups all purpose flour.

2 teaspoons baking powder.

Powdered sugar

Assorted fillings of your choice (nutella, jem, applesauce)


Instructions

  1. Heat the milk to lukewarm, whisk in the butter, egg yolks and sugar.

  2. In a separate bowl mix the flour and the baking powder and add to the mixture and whisk until well blended and no lumps remain.

  3. Whip the egg whites until stiff and fold into the mixture.

  4. Heat the pan over medium-high heat.

  5. Pour the batter to fill about half -¾ of the cups, drop your filling into the center and cover with more batter, to fill the cups.

  6. Using chopsticks check the edges to see if its brown, tilt the ball a little, and flip it around in quick motion. Tuck in any excess dough, to form the perfect ball.

  7. Keep cooking for few more sec on the other side, and pick to see if it's golden.

  8. When turns golden brown, gently transfer to serving plate and dust with powdered sugar.
