
Home made hummus
Ingredients
2 cups dry chickpea
½ teaspoon baking soda
1 teaspoon salt
¾ cup tahini
½ teaspoon cumin
For garnish
Some chopped parsley leaves
Olive oil
Sweet paprika
Cumin
Instructions
Place the dry chickpea in a bowl and cover in water overnight. Better to change the water at least once.
Drain and place in a put, cover with water, add the baking soda and boil. When foam start to form, remove it and turn the heat to low. Keep cooking for 2-3 hours till the chickpeas are super soft (to test it, throw one grain forcefully on the countertop - when it's done it will smash into the surface)
Drain the water, but keep them on the side.
Place the chickpeas in the food processor with the tahini and blend well. Add the water as needed for your desired consistency
Add the salt and cumin and keep mixing till well combined.
