Low-carb Asian chicken zoodles (zucchini noodles) stir fry

Serving 1-2

This is a speedy prep meal, so make sure to have all your ingredients ready ahead of time because once the wok is hot, it's just go, go, go. I love it and make it often. Be aware that its maybe low on carbs, but it's not low on calories 😉


1 slice of chicken breast cut to strips.

1 carrot - cut into julienne.

½ red bell paper.

2 stalks spring onions

4-5 cloves of garlic - cut into tiny pieces

¼ of onion - thinly cut.

4-5 mushrooms - sliced.

1 zucchini cut into noodles shape in the spiralizer

1 egg

1 tablespoon sugar free peanut butter

1 tablespoon sesame oil

4 tablespoons vegetable oil plus some for the chicken.

4 tablespoons soy sauce

1 teaspoon crushed ginger.

1 teaspoon crushed lemon grass

¼ cup of water

Optional - 1-2 chopped Thai hot peppers or chilli flakes if you like it spicy.

For garnish

Lemon wedge.

chopped spring onion/cilantro.

crushed roasted salted peanuts.

* I failed miserably with the garnish in my final photo because of lack of time - had to leave the house immediately after this photo was taken- and ingredients, but it's usually how I will eat it. Don't pass on the crushed peanuts and the splash of lemon. They add so much to the flavor in my opinion. The cilantro is a great addition too.


  1. Warm up some vegetable oil in a pan and saute the chicken for few minutes on both sides till nice and brown a little. Set the chicken aside.

  2. Put the wok on high heat with the vegetable oil and the sesame oil. When it's hot add the garlic for few seconds - till you smell it, and immediately add in the white onion and stir. It's important to do it fast so the garlic will not burn and ruin the flavor of the whole dish if it did burn, I suggest you start again. If you choose to add fresh hot paper, do it along with the garlic so the oil will be nice and spicy.

  3. Add the rest of the veggies, but the spring onion and the zoodles. stir and cook for 1-2 min.

  4. Add the soy sauce, ginger,lemon grass and and the water, and give it a stir.

  5. Place the egg in the center of the wok, let it cook for few seconds and then scramble it with the rest of the ingredients. Cook for 1-2 min.

  6. Add the zoodles and stir.

  7. Add the peanut butter and stir.

  8. Add the chicken and stir.

  9. Add the spring onion and stir - done.

  10. Garnish and serve immediately.
