Maple and walnut coffee cake


For the cake

3 eggs

1 Cup of sugar

1 cup oil

300 grams of white flour (2cups)

2 tsp baking powder

½ tsp baking soda

¾ cup fresh orange juice/ milk/yogurt/buttermilk

1tsp vanilla extract

For the topping

100 gr chopped walnuts

5 Tbs brown sugar

1 Tbs cinnamon

After baking

½ cup maple syrup


  1. Preheat oven to 180 degrees.

  2. Mix the topping ingredients and set aside.

  3. In a mixer bowl, on high speed, beat the whole eggs with a cup of sugar , for few minutes till light and fluffy.

  4. Lower the mixer speed and add the wet ingredients. Mix to combine.

  5. In a separate bowl mix all the dry ingredients.

  6. Sift the dry ingredients and add to the mixer bowl - mix on low speed only till combined.

  7. With a spatula, fold the batter to make sure everything is well combined, and pour to 2 English cake pans or loaf pans ½ to ¾ high.

  8. Spread the walnuts mixture between the 2 pans and bake 350f/180c for 35-45 min, till a toothpick come out clean.

  9. Pour the maple syrup on top of the cakes and let it soak in. Cool completly
