Potato salad

This yummy side dish can be great as a side dish in a barbecue, party or any family meal. It can also be great meal by itself, served with some greens.


1 can of peas and carrots, strained from the fluids.

4 - 5 potatoes, cooked till tender and diced

3-4 pickled cucumbers - diced.

4-5 tablespoon mayonnaise.

4 hard boiled eggs - diced.

Salt and pepper to taste.


  1. Place all the salad ingredients in a big bowl and mix well.

  2. Taste and adjust the seasoning as needed.
