This spread origin is from Yemen. Since I love spicy food, We always have this spread in my fridge and I use it on bread, on my pizza, and on my plate to accompany my meals. I love it and the bonus is that it's super,super easy to make.
1 bunch of fresh cilantro - thoroughly washed .
10 fresh green hot peppers.
Whole garlic head, clean and separate into cloves.
1 tablespoon cumin.
1 tablespoon cardamom seeds - grounded.
1 tablespoon coriander seeds - grounded.
1 teaspoon salt.
Place all ingredients in the food processor and blend well.
Place the spread in a glass jar in the fridge.
Can stay in the fridge for 2 months. The color will change from bright to dark green and it's fine. You can keep smaller amount in the fridge and store the rest in the freezer.
