The ultimate Tiramisu
I can't even start to count the number of times I made this fabulous dessert. The card with the recipe for it is so old and warm and stained,which is the best indicator of a hit recipe.
Every time I make it I get requests for the recipe. The thing I like most about this desert, beside the fact that it's super yummy and easy to make, is that it doesn't contain raw eggs like in the classic Tiramisu. I don't like the idea of raw eggs in my food. Maybe one day I will.
The only con to this recipe is that you need to plan ahead because you need to let it sit in the fridge overnight before it's ready to serve.
You will need to use a 10 inch springform pan
Ingredients
1 cup sugar
1 cup milk
2 cups heavy cream
1 package instant vanilla pudding (3.4oz/ 96gr)
1 teaspoon vanilla extract
1 package mascarpone cheese
1 pound sour cream
1 cup strong and sweet coffee of your choice - cooled (to make it kids friendly you can substitute the coffee with chocolate milk and skip the Irish cream)
¼ cup Irish cream
3 dozen ladyfingers
Some cocoa powder to serve
Optional - kit-kats or more ladyfingers with ribbon, to wrap around the cake ( see photo). Also can cover the top with m&ms or any other topping of your choice instead of the cocoa powder.
Directions
In the mixer bowl mix the sugar, vanilla extract, instant vanilla pudding, milk and heavy cream till soft to medium peaks form.
Add the sour cream and mascarpone cheese
Mix for 2-3 more min till soft peaks, no worry, it will stabilize overnight.
In a flat deep plate place the coffee and the Irish cream.
Dip the ladyfingers briefly into the coffee mixture and arrange in one layer at the bottom of the pan. Break the lady fingers into the needed length to make it fit the pan (see photo).
Pour half of the cream on top of the ladyfingers.
Arrange another layer of coffee dipped lady fingers on top of the cream.
Pour the 2nd half of the cream on top.
Place in the fridge overnight.
Dust the cake with cocoa powder using a sifter.
Pass a knife between the cake and the pan all around.
Carefully open the springform and remove it.
Optional - place kit-kats/ladyfingers all around the cake (you can cut them to the match the height of the cake if needed) and tie a ribbon around it.
