Tuna Salad
This salad is a regular in our house. The kids love to take it as sandwich to school in a bagel or tortilla wraps, sometimes we will have it as lunch in a baguette with fresh cut lettuce, pickles, tomatoes and onions. It can make great snack served with some crackers or make a great low carb meal wrapped in fresh lettuce leaves.
Ingredients
2 cans of tuna (5 ounce/142gr ) drained well.
2-3 tablespoons mayonnaise.
2 stalks green onions.
2 hard boiled eggs - chopped.
2 teaspoons dijon mustard.
About ⅓ cup thinly chopped pickled cucumbers.
Salt and pepper to taste.
Instructions
Place all the ingredients in a bowl and mix well.
Taste and adjust flavors as needed.
